While its original form will depend on the season and climate it is caught in, a Deerling left in the party will change forms depending on the season the player loads into, so players may potentially experience all forms with just one Deerling.

How To Evolve Deerling In Pokemon Scarlet & Violet
Due to its multiple forms, evolving a Deerling may initially seem complex, but it’s no different from how most Pokemon evolve. To evolve it, the player must get Deerling to Level 34. This evolution method is the same across all the forms of Deerling. Players can level up Deerling by battling with it, using EXP Share, or with Rare/EXP Candies.
